Chickpea flour savoury pancakes (Socca)

Nothing is easier to make than Socca, which tastes best in Nice, where it originated.

Buy some chickpea flour, add water, salt, a little oilve oil and rosemary if you like.

Mix until the batter is thin enough so that it spreads properly around a non-stick pan with a little bit more olive oil added to it.

You can make one large pancake or lots of small ones...

They are ready in just a couple of minutes!

Serve with just about anything you like, but we like it with white pepper powder, Himalayan salt, extra virgin olive oil and sliced tomatoes on the side .

Takes 5 minutes to prepare, is naturally gluten free, vegan, high in protein and very, very tasty.
