Fried bananas and plantains

When you eat a plant-based diet, you can sometimes crave fried foods. Deep fried plantains and bananas are a wonderful accompaniment to many dishes. When you occasionally buy meat replacements, such as vegan burgers or sausages, fried bananas and plantains are really great instead of chips or fries (which are, admittedly, also rather great).

On the boat we usually have these with wholegrain rice mixed with black beans (shallow fried with chopped sjallots) and a nice fresh salad.

The plantain need to be ripe so that they are easier to peel, and we always add some "normal' banana slices, for sweetness. Put enough vegetable oil in a pan to cover one plantain and one conventional banana, chopped. Fry until they look like on the photograph. When cooled, pour the oil into a jar as you can re-use it up to 6 times (and you will want to!).
